The 'PINK POPCORN MOVIE NIGHT' at Palmetto Baptist Hospital Auditorium was the Pink Posse August Party. The Philes thank Anna Saunders of the Palmetto Health Foundation for making all the arrangements to show the movie "Living Proof". This movie, based on a true story, stars Harry Connick, Jr. as Dr. Dennis Slamon who helped develop the drug Herceptin. Yes, we munched on pink popcorn too! As breast cancer survivors, we walked away from the movie very thankful for all the research and pray that one day we will live in a world without cancer.
Did you know the Pink Posse originally started as a 2008 Palmetto Health Foundation Walk for Life team? We have come a long way since 2008 and we have raised a ton of money for breast cancer too! Please consider being part of our 2012 Pink Posse Team as we take steps against breast cancer on October 6th! You can walk, run a 5K, 10K, or even be a VIRTUAL team member! One thing for sure, you don't want to miss it! In September, we are having a PINK PARTY for our Walk for Life Team members. Be part of the biggest and most fun team at the walk! Char's Chicken Salad
3 organic Chicken Breast
2 - 3 stalks organic chopped Celery
1 - bunch organic Red Grapes
Almonds or Pecans (add a small amount of butter and toast on low heat in oven)
Dressing: Hellmann's Mayo (Healthy option: Mix equal portions of Hellmann's Light Mayo and FAGE 0% Plain Greek Yogurt) Salt, Pepper, and Powdered Onion to taste
Boil chicken breast in a large kettle with plenty of water until done.
Remove chicken from bone and shred or cut into chunks.
Mix all ingredients adding mayo/yogurt mixture, celery, nuts, and grapes.
Refrigerate until served.

The July Party was one of those parties we didn't want to end! Actually, this party went on strong for a good three hours which made the Pink Posse World Book of Records! Honestly, we laughed for three hours. . . correction: We laughed our guts out for three hours! Remember how good it feels to belly laugh? We had a 'LAUGH FEST on the LAKE' with Banana Splits! Sherry went all out turning her home into an ice cream parlor with the best decorations ever! Everyone's assignment was to bring a banana dressed in a costume, one favorite banana split topping (preferable something healthy) and be prepared to share a very funny joke or story! Did I say bananas dressed in a costume??? Oh my, just take a look at the pictures! This party was a Platinum-plus keeper and you will definitely see it on our 2013 Party list for sure! Bren's 'Pink Sunshine Smoothie'
Navel Orange - peeled with the pith (white)
Green Apple - sliced
Carrots - 3 cups
Cherries - 1 cup fresh or frozen
Pineapple Juice - 6 oz
Ice Cubes - 2 cups
Place all ingredients into a Vitamix in order listed and select the Smoothie Cycle
Serves 2

June brought the Philes together for our 1st annual Pink Posse Potluck Picnic! We met at the South Carolina Oncology Prayer Garden and everyone brought a 'phat' potluck dish to share. Thanks to Meredith Anderson, Candy Coey and SCOA for providing food with all the trimmings to go along with the Philes potluck dishes. As always, the main goal of our monthly parties is celebrating life. . . Yes, we celebrated life while chowing down on all the delicious food! The Philes have phenomenal cooking abilities and you just might see a Pink Posse Cookbook in our future!?
The Pink Posse fundraiser for June was 'Muscles on a Mission' for Breast Cancer / OPERATION 'Lieutenants Lending a Hand'. Lieutenants from Ft. Jackson used their muscles to do all kinds of jobs for people in our community raising $1,450 for Palmetto Health Foundations 2012 Pink Posse Walk for Life Team! We thank Lieutenant Steve Cross for organizing this event for the Pink Posse.
The June 'Recipe of the Month' is Lisa K's Baked Oatmeal. She has tweaked this recipe to perfection and it's one of her family's personal favorites!

Lisa K's Baked Oatmeal
Mix:
1 cup coconut or almond milk
2 eggs
1/4 cup sugar or sweetener of your choice
1 Tbles. Cinnamon
1 tsp vanilla
Add 2 cups uncooked oatmeal, stir together
Pour in 9" x 13" pan (sprayed with Pam)
Bake 350 - 20 minutes
Sprinkle brown sugar over top and broil about 5 minutes until sugar is caramelized
Slice into 9 pieces and refrigerate for quick breakfast or snack.
Warm slightly in the microwave before serving
Health Directions hosted our Pink Posse May Party. We had the privilege of hearing guest speaker Thad Werts, a certified cancer exercise trainer who designs programs for cancer patients to develop strength and endurance during and after treatment. Thad spoke on the benefits of exercising after cancer. According to Thad, Wellness Workouts maximizes the benefits of your training within the parameters of your limitation. The goal is to support your recovery by emphasizing the importance of exercise and how to integrate it into your health care program. Several Philes signed up to participate in the program including moi'! Thad's presentation was extremely informative and we certainly do appreciate his expertise on this subject! Just one more way to PINK HEALTHY! Thanks Thad! Welcome survivors Shawn and Debbie!
Afterwards, we scooted down the road to Atlanta Bread Company where we socialized and made plans for the next few months. Let's see, we have a 'Potluck Picnic' planned in June, a 'Laugh Fest on the Lake" in July, 'Popcorn Movie Night' in August, 'Pink Party' in September, and something spectacular in October! October is also the Palmetto Health Foundation's 2012 Walk for Life and we are already recruiting peeps to walk with the Pink Posse Team. Yes, we have lots of Pink Posse 'phun' planned!
The PINK FLOWER PROJECT by Thirty-One ran this month on Facebook. Consultant Alison Branham reported there were 46 PINK FLOWERS purchased for our Pink Posse Breast Cancer Bags! Thanks to ALL who participated in this project. The PINK FLOWER PROJECT will be running every couple of months so if you missed the first one, you will have the opportunity to participate in the future.

Good Life Cafe' Chocolate Cheesecake - Sharon Wright
2 cups raw cashews soaked in water 2+ hours (discard water)
3/4 cup maple syrup
1/4 cup water
1/4 cup coconut oil
1/2 cup raw cacao
1 bag frozen cherries or raspberries (optional)
Mix in high speed blender
Pour over 1/2 cup shredded coconut sprinkled into a pie pan
DELICIOUS!
April was a very busy month for the Pink Posse Philes! We were invited to participate in our first Wellness Fair at the South Carolina State Museum sponsored by South Carolina Technical College System. Also, the Dorcas class at Riverland Hills Baptist Church invited us to set up a Pink Posse display for the 'Dorcas Women's Retreat.' Both events were excellent opportunities to spread breast cancer awareness! Philes Anne, Kathy, and Bren gave survival testimonies at the 3rd Annual Breast Cancer Awareness 'PINK TEA' sponsored by the Community Memorial Church of God In Christ. "The Fight is on to Survive" was the theme of this fundraiser for SCOA Cares Foundation and it was an honor for us to be included in this meaningful event.
The Philes met at the Good Life Cafe' for our monthly Pink Posse April Party. We learned about eating 'RAW' from owner, Sharon Wright. Sharon's interests in raw foods began over twenty years ago after her father had health issues. The Good Life Cafe' is the wonderful result of her desire to prepare the most healthy foods for her family! Welcome guest Elizabeth, Andrea, and Jennifer! The Philes certainly enjoyed some raw-mazing food and we highly recommend Good Life Cafe'! Please check out Sharon's April 'Recipe of the Month' for 'Kale Salad' below! Thank you Sharon!

Good Life Cafe' Kale Salad - Sharon Wright
2 Bunches of Kale
1/2 teaspoon sea salt
Olive Oil to taste
Juice of one lemon
2 cups assorted chopped veggies
Wash and drain Kale to dry
Strip leaves from stems and discard stems
Tear Kale into small pieces and place in a large bowl
Massage salt into Kale
Add Olive Oil, Lemon Juice and Veggies
Continue to massage dressing into Kale until it achieves a dark green color
Enjoy!

The decorations were phabulous and the food was prom perfect! Sorry theirs not a lot of details this month because....."WHAT HAPPENS AT THE PROM STAYS AT THE PROM, right?" :)
'The Pink Posse Palooza with a Purpose' video is now online! This event raised over $22,000 for SCOA Cares Foundation and as you can see from the video, we had LOTS of fun!

1 cup unsweetened Almond Milk
1 Tbles organic Chia Seeds

2 Tbles Hass Avocado previously frozen

Kathy's Baked Striper Italiano
1 ½ lbs. striped bass (or mahi, or other thick white fish)
2 T. Olive Oil (or Olive Oil Pam)
Juice of 1 Lime (about 1 T.)
4 tsp. Old Bay Seasoning (Original or Garlic and Herb)
1 tsp. Sea Salt
½ tsp. Pepper
2 tsp. Dried Oregano
¼ cup fresh Basil, chopped (or 2 tsp. dried)
3 cloves Garlic, minced
1 medium Sweet Onion, thinly sliced
4 -5 Tomatoes, cut in chunks (or 1- 14.5 oz. can diced tomatoes)
¼ cup Parmesan Cheese (optional)
Cut fish into 6 portions (removing any bloodline). Toss in olive oil and sprinkle with lime juice.Sprinkle both sides of fish with Old Bay Seasoning and place in a 11x7 glass baking dish.Layer fresh basil, garlic and onion slices on top of fish evenly.Mix together salt, pepper and oregano (and basil if using dried). Sprinkle evenly over layered ingredients.Top with tomatoes and Parmesan Cheese.If using canned tomatoes, lightly drain.Bake at 400 degrees for 30 - 40 minutes or untilfish flakes (do not overcook).Serves 6.

Ingredients:
4 cups filtered water
3 tsp Organic Vegetable Base Better Than Bouillon
1/4 cup Sweet White Miso Paste (inhibits growth of breast cancer cells)
Optional ingredients:
Per 8 ounces, a dash or two of organic cayenne pepper (buy from bulk jars at health food store)
Diced green onions (organic if possible)
1/4 cup firm tofu, cubed in small pieces (but if you are ER positive, avoid soy products)
2 Shitaki mushrooms, sliced
1 tsp Tamari soy sauce
Bring water and vegetable bouillon to a boil and whisk until bouillon is dissolved. Add mushrooms and simmer for several minutes. Turn off heat for a few minutes and wait until the liquid is hot but not at a boiling point. Add miso paste and whisk until dissolved. Add any remaining ingredients, stir well and enjoy!
Note: The enzymes in the miso paste will die if the water is at a boiling point. I enjoy this soup even if all I have is bouillon, miso paste, water and cayenne pepper. This makes several cups. You can reheat (but don't boil!) what you don't enjoy at one sitting. Miso paste can be purchased at EarthFare, Rosewood Market, Whole Foods, and just about any grocery store that stocks a large inventory of health foods.
Benefits of cayenne pepper: There are too many to list here! Research shows that an element in cayenne pepper causes cancer cells to "commit suicide." The following was found at http://www.cayennepepper.info This is just one of many sites devoted to the benefits of cayenne pepper.
Christmas is the best time of the year to be with friends. The Philes celebrated with a Christmas Party at Bren's and everyone brought their favorite breakfast dish to share. Thanks Philes for the P-licious food and to Sylvia for bringing the protein! We had a fun evening together celebrating life and discussing some exciting Pink Posse plans for 2012.

DRUM ROLL . . . for the fourth year in a row, The Pink Posse was the NUMBER ONE 2011 Walk for Life/5K Race for Life fundraising team raising nearly $7,000 for Palmetto Health Breast Center!
The Pink Posse Team wore bibs "IN HONOR OF LINDSAY" at the Walk for Life/5K Race for Life. Sadly, five days after the walk, Lindsay lost her battle on October 6, 2011 . . . she was only 43 years old. Lindsay joined The Pink Posse Philes in October 2010, and we have many fond memories of her. Please remember Lindsay's family in your thoughts and prayers.
The October Pink Posse Philes Party was held at Carolina Wings in Lexington, SC. What a great place for a party! Thank you Lisa for making all the arrangements! In addition to the delicious food at Carolina Wings, Edible Arrangements donated another pink-AHH-licious basket of fresh fruit and chocolates. . . Lisa Helfer, the Palmetto Health Foundation 2011 Walk for Life Featured Survivor and Anne Buck were the October program speakers. Lisa is a ten-year survivor and her positive energy radiated as she told her story and spoke of her son and family. Congratulations on 10 years Lisa! Anne Buck spoke at our February party and helped us start the year off with healthy smoothie recipes. Tonight, Anne's topic included her uplifting testimony plus invaluable information on incorporating healthy anti-cancer foods into our diet. Anne is such an inspiration for anyone who has been diagnosed with breast cancer. Thank you Anne Buck and Lisa Helfer!
The Pink Posse was invited to "DIG PINK" with the University of South Carolina Girls Volleyball game with Florida on October 19. We formed a tunnel to cheer on the USC girls as they were introduced before the game. It was very cool to see everyone in the stands dressed in pink to raise awareness for breast cancer.

The goal of the June Party was to relax, enjoy each others company, and once again, celebrate life! However, our party started off on a sad note when Melissa called to check on Lindsay . . . Lindsay, remember you are in our prayers 24-7. Melissa actually hobbled in on crutches from falling off her son's bunk bed changing sheets . . . Sylvia carefully walked in with a cane . . . and Kathy had surgery earlier that day and came to the party with a cast on her arm! OH MY!!! BUT - the three of them wore smiles on their faces along with the crutches, cane, and cast! Terriann served scrumptious food and we had lots of great conversation! We learned so many interesting facts about our Philes . . . this is one incredibly talented group of survivors!
The big news is that we have an official website! Yee Haw! www.PinkPossePhiles.com. Thanks to Sherry's friend, Robin, we are all up and running! Robin announced our website is #1 on Bing, #1 on Yahoo, and #2 on Google . . . How cool is that?
Plans for our 2nd Annual 'Palooza with a Purpose' are well underway, and it is going to be an outstanding event. Mark your calendars for Friday, September 23, 2011. PLACE: The HALL @ Senate's END (formerly Sterling Gardens). Dupre Percival is catering the Palooza again this year, and 'Jumpstart' will be back to entertain us! Palooza packetts were passed out and sponsorships need to be wrapped up soon. Posters will be printed before the July Party.
Clark Berry Photography is the offical photographer for the Palooza, and he will be doing some publicity shots of the Philes on June 30, at The Old Mill in Lexington @ 6 p.m. So, shine up your boots (if you have some) and wear anything black with a HOT PINK western twist! Oh yes, and a big pretty smile is most important!

Thank you, Sherry, for hosting a fantastic birthday celebration in March! We have so many survivors with March birthdays, so it was the perfect month to celebrate life! The delicious food, the fabulous decorations, and your lovely home made a perfect place for us to party!
Sherry’s birthday party inspired a new idea: How about if we start calling our monthly meetings “parties”??? Don’t you think Pink Posse Philes Parties sounds more inviting than Pink Posse Phile Meetings? Oh, how I love “P” words :o)
The next Pink Posse Philes Party is April 12, at Miyo’s. We only have room for about 7 or 8 more survivors so please make your reservation now.

Welcome, Anne Buck—our incredible speaker! It was so good seeing everyone . . . and a big thanks to Palmetto Health Foundation for allowing us to meet in their beautiful conference room. For those of you who missed the meeting, we had to leave in a BIG hurry because we set off the security alarm!!!!! We were all holding our ears as we frantically grabbed up our belongings (this included a juicer, a blender with a motor the size of a lawn mower, plus all the food from making smoothies, etc). Remember, Michele offered to give us all free hearing test this week :)
Anna, thanks a million for the conference room; and I sure hope we left everything in order!
First, a big thank you to Anne Buck (our speaker) and her assistant Kathy Mercer! VERY interesting and informative meeting! Thank you for getting us all excited about taking better care of ourselves and giving us tips on cancer fighting foods . . . this has opened a whole new world for me especially since sugar has always been one of my main food groups. I am happy to report that I made a trip to Rosewood Market and have been making smoothies everyday . . . and even made home-made almond milk a couple nights ago! Yee Haw!!! I also bought jar lids for sprouting but haven't located "large mouth" mason jars to screw them on :) and I have broccoli and chia seeds! Can't you just feel my excitement?
